Washing S CIP manual potato washer This is a simple hand operated potato washer designed by the International Potato Centre (CIP) in Peru.  A 250 litre oil drum is cut in half lengthwise. Paddle wheels with brushes are fixed onto an axle with wooden dowel.  A handle is fixed to the axle to rotate the paddles and agitate the potatoes/cassava.  The washer has a capacity of 25kg tubers and requires 150 litres water per batch.  After a few minutes the drum is turned on its side to empty the potatoes and dirty water.   6

Peeling

 

S-M Knife Hand peeling is slow and labour intensive but it still yields the best results. The output of one person is about 25 kg/hour of peeled roots with a loss of 25-30% of weight in the peels. Many attempts have been made to upgrade the peeling operation by using simple machines or by chemical action but many are reported to be ineffective and wasteful. 1

M CIP Belt driven motorised peeler This peeler is made from a sheet metal cylinder or 250 litre oil drum that has been hole-punched from the outside to make an abrasive surface on the insideIt is mounted on a horizontal axle and is rotated via a belt drive from a motor. Potatoes are fed into the drum from the top and as the cylinder rotates the protruding holes scrape the skin from the potatoes. Each end of the cylinder is fitted with a small door so that the potatoes can enter and leave from separate ends. A perforated metal pipe placed above the cylinder sprays water over the rotating drum. 20kg potatoes can be peeled in 4 minutes. Final peeling and trimming is necessary.A smaller version can be made using a similar design. 2 2

S-M Root crop slicer A simple slicer that is used to cut sweet potatoes. The sweet potato is held on a cutting platform against a plate which controls the thickness of the slice. Slices are cut off with a hinged cutting blade. Capacity of 23kg per hour.
